Sicilian Pizza – A History
Many food historians believe that Sicilian style pizza – also known as focaccia with toppings – has been popular on the western side of Sicilyshutt as far back as the 1860s. This type of pizza eventually came to America, but in a slightly modified form with thicker crust and a rectangular shape – although it is also served in a round shape in the some areas around the nation.
It is frequently topped with ingredients like onions, tomatoes, herbs and strong cheeses such as caciocavallo and toma. There are some versions – ask us at Sicilia Bakery – that do not include cheese. The great Sicilian traditional method of making pizza can be associated with local Italian culture and conventions.
The “sfincione” is a type of pizza that descends from the Italian province of Palermo. Unlike the more familiar Neapolitan-style pizza, it is typically made in a rectangle shape, and with more dough, cheese and sauce. Some traditional recipes include herbs, onion, tomato sauce, strong cheese and anchovies. The sauce sometimes is layered over the toppings, which serves to prevent the sauce from soaking into the dough – it’s all about the flavor!
